Pumpkin Energy Balls

Ingredients:

  • 1 1/4 cups of old fashioned rolled oats (quick oats work fine too)
  • 1/4 cup of ground flaxseeds
  • 1 Tbs of chia seeds
  • 11/2 tsp of ground cinnamon
  • 1/2 tsp of ground ginger
  • 1/4 tsp of nutmeg
  • a pinch of salt
  • 1/2 cup of creamy almond butter
  • 1/4 cup of pumpkin puree
  • 1/4 cup of date puree (or you can use honey too)
  • 1 tsp of vanilla extract
  • 1/4 cup of mini chocolate chips
  • 1/2 cup of shredded coconut to roll them in (you can use crushed up almonds, hemp hearts etc)

Stir all the ingredients together.  Place in the fridge for 10-15min to harder and then you can roll them into balls.  If you are using the shredded coconut (it’s yummy but not necessary) then roll them in shredded coconut!

Voila!
