Turmeric Mango Energy Balls

You are in for a treat…these are so yummy! 

Ingredients:
2/3 cup raw cashews (I used tahini or you can use any nut butter-Use  1/4 cup if you use a nut butter)
1 cup dried mango pieces (purchase organic and unsweetened)
½ cup unsweetened shredded coconut
1-2 tsp. creamed honey, for sweetness if desired (you could do dates instead)
seeds of 1 vanilla bean
1-2 drops of lime essential oil or lime zest
pinch sea salt
1 tsp of ground turmeric

makes approx. 20

Directions:


1. Soak cashews for four hours. Drain and rinse or use the tahini.


2. Soak mango for 20-30 minutes until slightly softened, but not mushy.


3. In a food processor combine all ingredients except honey. Pulse to combine until a sticky dough is formed. Taste for sweetness and add honey if desired.

4. Spoon out about a ½ tablespoon amount of mixture at a time and roll into a ball with your hands. Roll in coconut to coat.

**If the mixture seems too mushy place in the fridge for 20 min and then roll into balls.

**Store in the fridge for up to 2 weeks
