Healthy Peanut Butter Balls

This is the new favorite recipe at my place these days.  Keep them in the fridge or freezer for when you are needing a little pick me up or when you are craving something sweet...Unfortunately when my kids know we have a batch made in the freezer they don't last very long :)

Ingredients:

1 cup of crunchy peanut butter (my favorite but you could use smooth too or for a nut free option use sunflower seed or pumpkin seed butter)1/4 cup of maple syrup (you can get away with less if needed or can use honey or date paste)1-2 Tbs of pumpkin seed protein powder (or any one you have and otherwise can just be oat flour or coconut flour for example)1/2 cup of puffed rice cereal (not sweetened...you can use puffed quinoa or millet too)Combine these ingredients into a bowl...if too sticky add more protein powder or oat/coconut flour (any flour if you don't have these).Roll them into little balls and place each one on parchment paper lined cookie sheet.Put them in the freezer for 5-10 min3/4 cup of chocolate chipsIn the meantime, melt your chocolate in a pot a low heat making sure now to burn it (if you have a double boiler melt it at low heat stirring frequentlyTake the balls and roll them in the chocolate and then place them back on your parchment paper, once you have finished place them back in the freezer for 10 min or more.Hope you enjoy!Jana
