Holiday Energy Balls

These Holiday Energy Balls are great when you are craving something sweet or need a little pick me up especially during the Holiday Season when we tend to indulge in all the sugary treats!

Here you go:

Ingredients:

  • 1 cup of almond butter *

  • 2 cups of old fashioned oats

  • 1/4 cup of honey

  • 2 Tbs of chia

  • 1/2 cup of dried cranberries

  • 1 tsp of grated orange rinds (optional but is a nice addition)

  • 1 cup of finely shredded coconut (omit if you don’t like coconut and replace with crushed up almonds)

*Nut-free option: use seed butter instead

*In a big bowl, stir together all of the ingredients except for the coconut. Once all mixed up, roll little bite size energy balls. Put the shredded coconut on a plate or flat surface and roll the balls into the coconut to coat them. Put them in the fridge for 30 min to firm them up and enjoy! You can also keep them in the freezer and eat them straight from the freezer :)
