Pumpkin Spice Granola

It’s that time of year…and who doesn’t enjoy pumpkin spice anything?! I love having this granola on the Riviera vanilla coconut yogurt, with raisins, add in 1 tsp of ground flax and voila!



Here is the recipe!

Ingredients:

  • 3 cups of old fashioned oats

  • 1 1/2 raw pecans chopped

  • 1/2 cup of pumpkin seeds

  • 1/2 cup of maple syrup

  • 1/2 cup of pumpkin puree

  • 1/4 cup of avocado oil

Homemade Pumpkin Spice Mix OR you can buy a Pumpkin Spice mix too (my fav from Trader Joe’s)

  • 1/4 tsp of all spice

  • 2 tsp of cinnamon

  • 1/2 tsp of cloves

  • 1/2 tsp of nutmeg

  • 1 tsp of salt

  • 1 tsp of vanilla extract

How to:

  • In large bowl, mix together the dry ingredients including the spice mix

  • In a separate bowl, mix your wet ingredients together until smooth

  • Add your wet ingredients to your dry and mix all together

  • Line a baking sheet with parchment paper and spread your mix onto the sheet evenly

  • Bake for 30-35 min, turn the baking sheet around in the oven halfway through

  • The granola will be done when the oats start to get lightly brown…

    **Granola will continue to harden once it cools and then once cooled, add to a big container or mason jar
